I have always made it a point to reduce my steps while cooking a dish to its bare minimum so that I never have to struggle and confuse myself with the complexity of cooking and rather convert it into a simple and fun thing to do!
So keeping that in mind, here is my shortest recipe of a super easy breakfast/snack/mid meal in just 5 steps requiring no preparations in advance😁
Recipe for Corn-Carrot Kebabs:
- Corn- 1 cup (boiled)
- Carrots- 1 spoon (grated)
- Potato- 1 (boiled and mashed) – Just to help with binding
- Bread crumbs- 1 cup
- Bell pepper- 1/2 cup (all types)
- Turmeric powder/haldi- 1/4 tbsp
- Chilli flakes- 1/4 tbsp
- Chat masala- 1/4 tbsp
- Lemon juice- 1 spoon
- Salt- as per your taste
- Mint leaves- Handful
- Coriander leaves- Handful
- Green chillies- 2
- Besan/gram flour- 2 tbsp
- Ginger- 1/2 inch
- Oil- for shallow fry
Step 1- Take boiled sweet corn, grated carrots, mint leaves, coriander leaves, green chillies, ginger and crush them in a food processor.
Step 2- Add the boiled and mashed potato, besan/gram flour, bread crumbs and salt in a bowl and mix it all together.
Step 3- Shape the mixture into your desired shape (if you are making a cutlet) or arrange the mixture into the Barbeque Skewers (if you are making a kebab).
Step 4- Now deep fry/shallow fry or grill, whatever suits you.
Step 5- Serve corn-carrot kebabs hot with your favourite chutney/ketchup.
