A savoury dish adapted in India from a popular American dish is prepared with crispy fried noodles/spaghetti and saucy stir-fried vegetables (soup).
My perfect bowl of happiness would be a bowl of this! Easiest to cook and can last for a day or two for sure!
After a recent meet with one of my friends, I really wanted to make the chopsuey with the only variation that I used spaghetti made of durum wheat instead of maida/all purpose flour and added a bit for extra rock salt, pepper and chilli flakes than required just to enhance the flavour and give it an Indian touch🧡
You can make these easily with all the ingredients available at home without rushing to the supermarket for the ingredients!

All the chopped Vegetables
Ingredients:
•Noodles/Spaghetti- 1 packet
•Water- 2.5 litres
•Red bell pepper-1
•Yellow bell pepper-1
•Green bell pepper-1
•Baby corn- A few
•Carrots- 1 cup (chopped)
•Beans- 1 cup (chopped)
•Cottage cheese- 1 cup (cubes)
•Red chilli sauce- 2 spoons
•Ketchup- 2 spoons
•Soya sauce- 1 spoon
•Schezwan sauce- 1 spoon
•Corn flour- 4 spoons
•Salt- as per your taste
•Pepper- as per your taste
•Chilli flakes- as per your taste
•Vinegar- 1 spoon
All the sauces: Schezwan sauce, soya sauce, ketchup, Brown vinegar, corn flour
Method: For the spaghetti/noodles:
•Take a big pan and pour 1.5 litres of Water.
•Add salt and a little oil.
•Let the water boil.
•Add noodles/spaghetti to the boiled water.
•Cook for 5 minutes. (if you are using spaghetti, then cook well as it will take more time)
•Stain the water and wash the noodles/spaghetti with cold water.

•Add 2 spoons corn flour into the noodles and mix well.

•To fry the noodles/spaghetti, Take another pan and add oil, let the pan heat.
•Then Take 1 bunch noodles and pour into the oil in a round shape. Do it in batches as per your quantity of individual servings.
•Fry the noodles on both sides.
The Soup
For the Soup:
•Take a pan and add oil to it.
•After the pan heats, Add all the chopped vegetables to the pan.
•Add 1 litre water.
•Add all the sauces.

•After a while add Salt, vinegar and 2 spoons corn starch
•Let it cook for 5 minutes. How to serve:
•In a bowl, pour the hot soup.
•Then take 1 bunch of fried noodles and place in the middle of the bowl.
•The fried noodles will soften because of the hot soup.
Its best served hot!
